Recipe: Instant Pot Turkey🦃 Sausage and Kale 🄬Soup

ā€œZuppa Toscanaā€-Serves 5


Spray oil

2 lbs mild or spicy ground Italian turkey sausage

1 medium onion, chopped

3 cloves of garlic, minced

32 oz vegetable or chicken stock

1/2 tsp oregano

salt and pepper to taste

4 cups peeled and chopped white or sweet potato *(I cook separately in a pot on the stove and add to individual bowls according to how many carbs you need)

2 cups chopped kale


Press ā€œSauteā€ button on Instant Pot. Add spray oil and heat for a minute. Brown sausage until longer pink. Add onion and garlic and sauce for a few more minutes. Add potatoes (or boil separately on stovetop until fork tender), stock, oregano, salt and pepper. Stir.


Lock the lid and turn valve to ā€œSealingā€. Cook on High for 10 minutes. Turn off the Instant Pot and turn seal to ā€œVentingā€. Carefully open the lid and add chopped kale and stir and serve.
